Cornelius Harnett Boule,.ard The plans for the remodel of the kitchen and bathrooms have been reviewed. The plans cannot be approved at this time, due to the need for additional information. The following information is requested in order to complete the review of the plans. 1. Provide the number of seats, inside and outside, and any proposed additional seating. Provide equipment specification sheets for the following equipment: food prep sink, convection oven, wall mounted shelves, and any other shelves. 3. Provide the location of the dishwasher. 4. Provide specific use of the convection oven. 5. Where do you intend to stage dirty dishes in addition to the drainboard on the three compartment sink? Currently a work table is used to stage dirty dishes and this table is not indicated on plans in new dishroom. 6. A handsink is required in the dishroom. Indicate the location of handsink. 7. Provide the total square feet of air drying space and utensil storage in the dishroom. 8. Do you intend to have wall mounted shelves above prep sinks and the three compartment sink? If so, provide an equipment specification sheet and indicate the shelving location. 9. Provide an explanation on what is located beside the wall mounted shelves in the dishroom. There is a symbol on the plans, but no reference for the symbol. All requested information shall be submitted to this office for review.
