Dear Mr. Anastasi:
This letter acknowledges review of the plan for the above referenced establishment. The plans, specifications and email
correspondence are approved with the following comments:
1. As indicated on the application meats & poultry are received fully cooked and frozen. They are thawed under
refrigeration. All produce is received ready to use. The frozen dessert dispensers will be cleaned overnight during non-peak
periods. The dispensers must be protected from public handling during cleaning. Manufacturers cleaning instructions must be
maintained on site.
2. All food equipment must comply with subpart 4-205 of the North Carolina Food Code and be installed as specified in
subpart 4-402. Food shields must extend a minimum of 60” above the finished floor. Otherwise, the equipment plan on sheet A-
13A is approved.
3. The finish plans and schedule shown on the application and on sheets A-5,A-7, and A8-A are approved.
4. The plumbing plan on sheet P-4 is approved, as is the 100-gallon 150,000 BTU water heater (WH-1) specified on the
application and sheet P-5.
5. Lighting must comply with Sections 6-202.11 and 6-303.11 of the North Carolina Food Code.
6. Documentation verifying off-site cleaning of the dumpster may be required by Harnett County Environmental Health.
The establishment must comply with the requirements of the North Carolina Food Code and 15A NCAC 18A .2600,
"Rules Governing the Food Protection and Sanitation of Food Establishments.” These documents are available on our web page

other jurisdictions.
