I have reviewed the preliminary site plan and additional information submitted. The approval is granted
for the preliminary plans with the following exceptions:
1. Provide a final set of plans including a final layout of equipment, plumbing, lighting and finish
schedule. Any changes to menu, food process sheets, specification sheets, seating and application
shall be submitted to our office for review, along with the final set of plans.
2. Indicate on the final plan the location of the following: single door cooler, single door freezer, two
door refrigerator, shelving for cleaned, dried dish /utensil storage, shelving for dry goods in the
kitchen /cooking /prep areas, shelving for catering supplies. Any changes to the layout shall be reflected
on the final set of plans.
3. Relocate can wash to loading area or outside. Indicate location of can wash on final set of plans.
4. Indicate the purpose of stainless steel tables beside three compartment sink. Basin of three
compartment sink shall be large enough to accommodate your largest utensil.
5. Due to the size of the dishwashing area, limited multi -use utensils will be allowed. As discussed, the
majority of multi -use utensils will come from a rental company and multi -use utensils will be taken
off -site for washing, rinsing, sanitizing and storage.
6. Splashguards will be required where cross contamination of food and utensils is present.
7. Preliminary plan indicates a dining area with seating for 52 persons.
15A NCAC 18A.2651 and FC 1- 201.10 "Restaurant" means a food establishment that prepares or serves
food and provides seating. If seating is provided, the facility will be permitted as a restaurant.
Our Department shall be notified of any changes to the dining area and the number of seats in the
facility.
The items listed above are subject to change with the review of the final plans.
A review of the final set of plans is required prior to any construction that takes place after the
building shell is constructed.
